This delicious and healthy Mediterranean recipe for Hummus is easy and quick to prepare. Hummus, originally comes from Lebanon and is a cream of garbanzo beans with garlic, lemon and olive oil.
1 can garbanzo beans
½ cup lemon juice
½ cup olive oil
2 peeled garlic cloves
Drain and wash the garbanzo beans. Blend them in a liquidizer along with the lemon juice.
Pour in the olive oil and blend again until the mixture is completely creamy. Using a garlic press, crush the garlic and add to the humus. Let the mixture stand for 2-3 minutes before blending it once again.
For a spicier version, dunk a whole red chilli into ½ cup olive oil and let it stand for a couple of hours. Discard the red chilli and use the same oil in the hummus.
