These wonderfully crisp cookies are a hot favorite during the holiday season but there’s nothing stopping you from enjoying them round the year. Go ahead and bake, decorate and celebrate with these cookies topped with frosting and sugar, of course!
2 cups all-purpose flour
1 cup sugar
2 egg whites
10 teaspoons melted butter
1 teaspoon vanilla
1 teaspoon baking powder
½ teaspoon salt
For the frosting:
2 cups confectioner’s sugar
3 teaspoons skimmed milk
1 teaspoon vanilla
Ground cinnamon
Pre-heat oven to 375 deg. F. Spray cookie sheets with nonstick cooking spray.
Beat sugar and butter in a bowl until fluffy. Beat in the egg whites and vanilla.
Now in a separate bowl, combine the flour, baking powder and salt.
Add the flour mix to the egg mix and beat well.
Wrap the cookie dough in a plastic wrap and refrigerate for about 4 hours.
Now roll out the dough on a floured surface to 1/4-inch thickness. Using a cookie cutter, cut out cookie shapes. Place the cookies on the cookie sheets and bake till golden brown.
For the frosting: Mix the sugar, milk and vanilla in a medium bowl using a fork. Once the frosting is ready, frost the top of the cookies and sprinkle cinnamon on top.
Frost cookies and sprinkle nutmeg or cinnamon on top.
Frost the cookies only after they have completely cooled down – else they will lose their crispness.
